The predecessor of AquaLab water activity meter was a measuring instrument for soil and plant cell water potential, launched by the company's founder, Dr. Gaylon S. Campbell, a soil science professor at Washington State University in the United States, in 1983. Dr. Henry Leung, a professor of food science at Washington State University, dedicated himself to applying this instrument to the study of food moisture activity, replacing the slow and expensive measuring equipment at the time, thus giving birth to the world's * fastest instrument for measuring food moisture activity. In recognition of Dr. Henry Leung's outstanding contributions in the field of food research, the American Society for Food Science and Technology awarded him the Prescott Award in 1984.
Dr. Gaylon Campbell and company president Joe Harris attended the annual meeting of the American Society for Food Technology in 1983 with their AquaLab water activity meter. Dr. Ted Labuza, a renowned authority in the field of food water activity and a professor of food science and engineering at the University of Minnesota (recipient of the Morse Alumni Outstanding Education Award), has developed a strong interest in this instrument.
